Banoffee pie is magical. You have to agree.


Now that I’ve gotten that out of my system, I can tell you about the Banoffee challenge.


To celebrate watching the final part of the LOTR trilogy- The Return of the King (btw how HOT is Aragorn?!), two Banoffees were to be made. One by me and one by a friend.



Except that this friend bought it instead of making it! He wants to remain name-less of course, but it’s his birthday today- so Happy Birthday :)


I tried to create Anduril (Aragorn’s sword) on my Banoffee pie. It is of course, more the spirit of the sword, than a realistic version :)



At the end of the day, there was just a lot of delicious Banoffee on everyone’s plate. And no one was complaining :)

Also, I made Banoffee once before with ice-cream instead of cream. We died a bit with the sweetness, but other than that it was nice!


Mondays are better with Banoffee pie. Actually all days are :)

Banoffee Pie


Prep time: 10 mins
Cook time: 4 hours (the caramel) + cooling + setting
Serves: 8


Ingredients:


400g tin condensed milk
120 g digestive biscuits, roughly crushed
30 g butter, melted
3 ripe bananas, sliced into rounds
200 ml cream
2 tbsp icing sugar


Method:


1. First we need to make the Dulce de leche. This is the BEST caramel of your life. And it couldn’t be easier to make. Just put an unopened tin of condensed milk in a pan of water (the tin should be covered all the way with water) and let it boil on a simmer for 4 hours. Keep adding water to make sure the whole tin is covered throughout the boiling process. After 4 hours, take it off the flame and let it come to room temperature. Open it only once it’s absolutely cool. What you see will be the best caramel you’ve ever eaten.
2. Mix the crushed biscuits with the melted butter and line the base of your serving dish with the biscuit crumbs in an even layer, pressing down as you do so.
3, Add your heavenly caramel or Dulce de leche all over the biscuit base in an even layer. Top with the sliced bananas and refrigerate.
4. Whip the cream with the icing sugar till semi-solid peaks form. Take the dish out of the refrigerator and put the whipped cream over the bananas in an even layer, before chilling again. Let it set overnight for best results or at least for 5 hours before you dig in.

2. Listen to the Glee version of We found love on repeat and get depressed. (Best proposal ever, or what?!)
3. Eat a whole bag of peanuts. Trust me on this one.
4. Watch a rom-com and get teary-eyed. (It’s been done to death! Why not try a horror movie?)
5. Pretend like you hate everything about this day. (seriously- not cool.)

1. Control your gag reflex everytime you see a furry, pink heart.
2. Log onto Pinterest and see something funny like this, something inspirational like this, or something amazing like this. (but try not to spend your WHOLE day there. It’s harder than you might think.)
3. Have a glass of wine with your girlfriends. (Or French fries. French fries are good.)
4. Remind yourself how amazing you are. (and how many people love you!)
5. Bake this cake. This dark chocolate cake. Eat a piece. Maybe two. (Heck, even a third! Who’s watching?)
And know that love will find you, if you want it to.

Dark chocolate flourless cake
Recipe adapted from: Baking Bites

Prep time: 20 mins
Cook time: 22 mins
Serves: 12

Ingredients:

125 g good-quality dark chocolate, broken into pieces

125 g butter (salted is fine), plus a little extra for greasing

150 g castor sugar

3 eggs

50 g cocoa powder

1 tsp vanilla powder

1 tsp coffee powder

Method:

1. Preheat the oven to 190º C. Melt the chocolate and butter in a double-boiler, and mix until glossy and smooth.
2. Add the sugar and mix well. Crack in the eggs one at a time, and incorporate the first before cracking the next. Mix well.
3. Sift in the cocoa, vanilla, and coffee. Mix until everything is incorporated. Line an 8-inch square tin with baking parchment and grease slightly. Pour in the batter and bake in the preheated oven for 22 minutes. Remove and let it cool completely. It will be a bit wobbly when you take it out, but will harden as it cools. Eat plain or with vanilla ice-cream. Tastes even better the next day!

Some friends met on Friday.

Now since these friends have known each other forever, a number of (silly) activities were (obviously) indulged in.

Activities included were:

Drinking white wine

Discussing relationships

Eating cupcakes

Laughing

Taking photographs that weren’t great (blame the wine)

Hugging

Power naps

Singing songs together

And smiling (lots and lots of smiling)

These are some of the things my crazies and me did recently.

We also ate Khow suey.

2

Khow suey is a traditional Burmese noodle dish. It involves noodles, and a rich coconuty gravy (usually with chicken, beef, or shrimp) that you eat with a number of condiments.

The noodles and gravy taste fantastic, but it’s the condiments that are the real fun part :)

2

Together they create a perfect balance of taste and texture in your mouth- sweet, spicy, creamy, tangy, crunchy- all in one mouthful.

Condiments for Khow suey differ from region to region, and you can choose almost anything you like.
